3 tbsp. butter or margarine

1/4 cup flour

1 cup milk

1 tbsp. minced onion

1 tsp. Worcestershire sauce

1/3 tsp. salt

1/2 tsp. ground black pepper

1/8 tsp. ground red pepper

1 large egg, lightly beaten

2 cups chopped cooked shrimp

1 3/4 cups saltine crumbs

2 large eggs, lightly beaten

1/4 cup mayonnaise

1/8 cup sriracha, to taste

 DIRECTIONS:

  • Preheat air fryer to 395°F
  • Melt butter in a large heavy saucepan over low heat; whisk in flour. Cook and whisking constantly for 1 minute. Gradually whisk in milk; cook over medium heat, whisking constantly, until thickened and bubbly. Stir in onion, Worcestershire, salt, black pepper, and red pepper. Remove from heat, and stir in 1 egg and shrimp. Cover and chill 1 hour.
  • Shape shrimp mixture into 16 balls. Roll in saltine crumbs, dip in 2 beaten eggs and roll again in saltine crumbs.
  • Place into air fryer and program at 395°F for 9-12 minutes. Repeat the process until all croquettes are cooked.
  • Make the sauce by stirring the sriracha into the mayonnaise, using more or less to taste.
