6 cups single/light cream
6 cups heavy/double cream
1 1/2 cups brown sugar
6 tbsp. butter
1 1/2 cup of pecan nuts (chopped)
3 teaspoons vanilla extract (or according to taste)
- Place the single cream, sugar and butter into a saucepan and mix together over a low heat. Stir until the mixture starts to bubble around the edges. Remove the saucepan from the heat and allow to cool completely.
- When the mixture is cooled, stir in the heavy cream, chopped pecan nuts and vanilla extract. Transfer the complete mixture into ice cream maker and freeze according to the instructions.
